Cooking Carrot Cake at Home

Hello. I’m off from work today and it happens to be my step dad’s birthday. As a surprise, I decided to bake him his favorite cake, carrot cake. This was my first time baking a carrot cake and the results came out great! I got the recipe offline from sallysbakingaddiction.com and, after asking permission, will share a link to it. Now, I added a few changes such as walnuts to the pecans, more vanila, eliminated the cloves ( my step dad does not like cloves) and it turned out exceptionally well.

This is a good example of how cooking can be a joy, especially when cooking for someone else. I set the tone with some good blues and jazz, gathered my mise en place and got to it. The recipe called for quite a bit of items, all necessary to create that unique flavor profile. What I enjoyed most from this recipe is the attention to detail. Applesauce is added for moisture, as is brown sugar, for example. I especially enjoyed the process ( and taste! ) of the cream cheese frosting.

Overall, the recipe was well thought out and everyone enjoyed the finished project. I have saved the recipe to make again and I encourage you to try it for yourself.
